Our flock of 300 Barred Rock and Rhode Island Red hens lives on 5 acres of mountain pasture at 6,800 feet outside Heber City. They rotate across fresh grass every few days, eating bugs, grubs, and certified-organic feed supplement. The elevation and the pasture diet do something to the eggs. The yolks are a deep, almost burnt orange. The whites are firm and full. Chefs notice it immediately — several Salt Lake restaurants switched to our eggs and haven't gone back. We're Certified Humane and certified organic on the feed side. The hens have names (well, the memorable ones do). Come by any Saturday and you'll probably meet a few.
